That looks awesome, even just the get together. How does it work tho? Say a freestyle wrestlers shows up.. does he go to the sambo practitioner, get a good idea of the sambo rules from him and then spar according to the sambo rules or is it just a general grappling spar?

Pretty easy.
You just rotate around the room and agree on the ruleset you want to compete under, if you are nit sure on the rulesyou kearn them as you go.
For the throwing styles you declare you exerience and such to your sparring partner and they will accomidate.
For the ground styles you ask similar.
These things are fun.
Given the list above there is nothing there that competant judoka should have a problem with having a go.
